Paper weights extensively tested and verified with official white toner (WT) series OKI printers. Settings may vary for other printers.

When should I use CMYK instead of Overprint and vice versa?

Overprint is used when you have white in your design or you are printing light colours such as skintones, progressive gradients and/or pastel colours. CMYK printing is best used when you are printing just black, so that you aren't using a combination of Cyan, Magenta and Yellow toners to make up the composite black; therefore saving toner costs, alongside the benefit of producing a true black with a black toner installed. Or when you are printing primarily deep/dense/dark colours, where the white and density provided by the spot channel overprint is not required.

What is Overprint and Underprint?

With the printer set to "Overprint" configuration, the white spot channel will print on top of the colours. Whereas when the printer set to "Underprint" configuration, the white spot channel will print beneath the colours. For example, the colours printed onto Clear Window Cling when in overprint configuration; will only be visible from the outside when applied to a window - printed in underprint configuration, the colours will only be visible from the inside.
